Pistachio Pavlova with Summer Fruits

For the meringues:
- 270g caster sugar
- 20g chopped pistachios
- 5 x large free range eggs (whites only)
For the vanilla crème Chantilly (whipped cream):
- 300 ml double cream
- 3 tbsp of caster sugar
- seeds of 1 vanilla pod (or 3 drops of vanilla extract)
For the fruit:
- 500g of your favourite summer berries
- 150 g vanilla/caster sugar
- 100 ml of Raspberry and Rose Belvoir Fruit Farms’ cordial.
For the meringues:
- Pre-heat oven to 130 degrees Celsius
- Whisk up egg whites until they peak
- Add the sugar gradually and whisk for a further 6-8 mins
- Fold the pistachios into meringue
- Mould onto a baking sheet and bake for 1 hour
For the vanilla crème Chantilly (whipped cream):
- Place 300 ml double cream into a mixing bowl with 3 table spoons of caster sugar and the seeds of a vanilla pod (or 3 drops of vanilla extract)
- Whisk until nice and thick
For the fruit:
- Take 500 gm of your favourite summer berries, place onto a tray and freeze for 2 hours
- Remove from the freezer, sprinkle with 150 gm vanilla/caster sugar and add 100 ml of Raspberry and Rose Belvoir Fruit Farms’ cordial.
- Allow the fruit to defrost naturally (approx 40 mins)
- Strain off the fruit juices, place into a saucepan and bring to the boil
- Reduce by half, strain and chill
Assembly:
- Place the pavlova in the centre of the plate
- Add a spoon of the vanilla crème Chantilly in the centre, then spoon over the summer berries on top of the cream
- Finish with a scoop of your favourite vanilla ice cream or sorbet to chill down any hot summer’s day!
My Hints & Tips:
- Once made, these pavlovas will keep for a couple of days packed into an airtight tin or container
- If you’re really pressed for time, you could always buy one large ready-bought meringue or several packets of individual ones

What a lovely summer pudding! So what to drink with it? A light and fruity dessert wine perhaps, something from the Muscat grape would be a joy. Even a Vin Santo from Italy, with its nutty nuances may complement the pistachio flavor of the pavlova. But my choice, and as it is summer and we are celebrating the wonderful English weather (hopefully), why not try an English wine, Camel Valley Brut? A truly stunning English sparkling wine from Cornwall, light and refreshing with plenty of fruit.
